Induction hobs heat a cooking vessel by electrical induction, instead of by thermal conduction from a flame, or an electrical heating element. The cooking vessel must be made of or contain a ferromagnetic metal (if a magnet sticks to the bottom of your pan it will work on an inductuon hob). Induction hobs heat the contents of the pan first (not the pan), the pan gets hot from the radiant heat of the pan contents. The hob itself only gets hot from the radiant heat from the pan making this method of cooking a lot safer than gas & ceramic plus more efficient.
